Pork stir-fry with ají amarillo

Ingredients
- 450 g pork loin cut into 1 cm strips
- 2 tablespoons PIKI pork seasoning
- 2 tablespoons PIKI ají amarillo paste
- 1 large red onion cut into wedges
- 2 medium tomatoes cut into wedges
- 2 tablespoons soy sauce
- 1 tablespoon white vinegar
- Fresh cilantro, chopped, to serve
- Vegetable oil, salt and pepper to taste
- To serve: white rice and french fries
Preparation

Mix the pork strips with the pork seasoning, salt and pepper. Let it rest 10 minutes while you prep everything else.

Heat a wok or large skillet over very high heat with a drizzle of oil. When it smokes, sear the pork in two batches so it browns properly instead of steaming. Set aside.

In the same wok add a little more oil and stir-fry the onion over high heat for 2 minutes, stirring constantly. Add the ají amarillo and cook 1 more minute.

Return the pork to the wok, add the tomato, soy sauce and vinegar. Toss everything together over high heat for 2 minutes. The tomato should keep some texture, not fall apart.

Serve immediately over white rice and french fries. Finish with fresh chopped cilantro on top.
